Sweet Potato Oat Bars

I am all about convenient foods. The easier they are for us to make and bring with us. The easier it is to make those healthy choices through the day. These Sweet Potato Oat Bars as delicious, easy, nutritious, and filling. They are easily packed up to take with you everywhere. Source of healthy fats, lean protein, and powerful carbohydrates. Can be eaten for breakfast, lunch or a snack. All of these ingredients are considered clean. Clean ingredients means that they are in their natural form or as close as possible. Our body digests clean ingredients much easier than processed foods.

Ingredients

1 TBS olive oil

5 Sweet potatoes, washed trimmed of all fibers (they should be similar size)

4 cups of oats

3/4 cup milk of choice

1 TBS lemon juice

1/4 cup finely ground flax seed

1/2 cup good quality maple syrup

2 TBS pumpkin spice mix

2 TBS coconut oil

1/2 cup of dried fruit of choice (raisins, dates, cherries, blueberries etc) chopped

1/2 cup of raw unsalted nuts (almonds, walnuts, pecans etc) chopped

Pinch of salt

Instructions

Step 1.) Preheat oven 400 degree, coat baking sheet (9″x13″ and 1″ deep) with olive oil and line with parchment paper.

Step 2.)Prick sweet potato all over with fork. Bake for 45-60 minutes. Until tender and can be mashed. Baked right on the oven rack. Let cool

Step 3.) Once cooled remove skins and mash in large mixing bowl. Keep oven at 400.

Step 4.) Mix the rest of ingredients with the potatoes. Mix well

Step 5.) Press the mixture into the prepared baking sheet. Spread evenly.

Step 6.) Bake for 30 – 35 minutes. Or until the top is golden

Step 7.) Remove from heat let cool. Cut into squares.

Enjoy!

Double this batch and freeze some for busy weeks in the future. Being prepared with healthy snacks on hand is one of the keys to nutrition success.
