These muffins are the perfect snack to take along. They provide healthy fats, protein and carbohydrates that leave you satisfied and fueled. This recipe makes about twelve muffins. They are a great source of Iron and Calcium as well. I like to double the batch and freeze some for the future when weeks can be busy.
Snack prepping is just as important as meal prepping. It is often forgotten and many accumulated calories come from snacking. If we are set up with healthy snacks. We can make better healthy choices when those snack cravings hit!
What You Will Need
Muffin Tin (12 muffins)
1 Cup Whole Wheat Flour
1 Cup Unbleached Flour
1/2 Chocolate Protein Powder of Choice
1 TBS Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon
2 Frozen or Ripe Bananas
3/4 Cup Fortified Soy Milk or Milk of your choice
1/4 Vegetable Oil or your choice I used olive oil
1/2 Cup of Maple Syrup
2 tsp Apple Cider Vinegar
1 Cup of raisins or chopped dates
Directions
Pre heat the oven to 350F. Lightly oil or spray pan. You can also add liners if you please.
Step 1.) In a large bowl add flours, protein powder, baking soda, powder and cinnamon. Stir to combine.
Step 2.) In another bowl smoosh bananas. Add milk, oil, maple syrup, and vinegar. Mix well. You can add all of these into a blender as well to mix.
Step 3.) Add half of the wet ingredients to the dry and mix well. Add in the remaining wet ingredients continue to mix. Once mixed together add in raisins or dates.
Step 4.) Add the batter into the muffin tins. Fill just below the top.
Step 5.) Add to oven in middle rack and bake for 30 minutes. Check at 30 minutes. Poke a tooth pick in middle of muffin if it comes out clean they are done. If there is still batter on tooth pick place back in the oven for 5 Minutes at a time. Repeat checking method.
Step 6.) Let muffins cool for 10 minutes and enjoy!
